The other day I had family over for a huge beef roast and raspberry baked cheesecake. This is super tasty and the easiest think to make. It is best made the day before, which makes it even better, especially as the rack of beef my fiance came home with barely fitted in the oven. It will take around 15 minutes to prep and then an hour in the oven. Best served with cream and a glass of wine.
